Spice up your meals with this tasty chicken recipe. Spices will help you with your weight loss goals, whilst the protein will help you with muscle building. It's quick, easy to make and keeps the calories low. If you don't like things too spicy you can always remove the chillies for a milder option.
Ingredients
4 x chicken breasts
2 chillies
Clove garlic
3 x tbsps organic crunchy peanut butter
Soy sauce
1 inch piece ginger
3 x limes
2 x handfuls fresh coriander
1 x cucumber
1 x red onion
Bunch spring onions
Handful fresh mint
Dash fish sauce
Method
Blend together the chillies, garlic, soy sauce, ginger, peanut butter and juice of 2 limes to make the satay mix for the chicken.
Cut the chicken into bite-sized pieces, pierce onto skewers and cover with the satay mix.
Place under the grill to cook, turning when brown.
To make the salad, use a potato peeler and peel lengthway strips of the cucumber.
Chop the red onion, spring onions and fresh mint and add to the cucumber.
Mix together fish sauce, soy sauce and juice and zest of 1 lime to make the dressing.
Toss the salad in the dressing and serve with the freshly grilled satay skewer.
