Full recipe for a delicious pumpkin baked oatmeal.
Preheat your oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking dish or line it with parchment paper.
In a large bowl, combine the oats, cinnamon, nutmeg, ginger, cloves, baking powder, and salt.
In another bowl, whisk together the milk, pumpkin puree, maple syrup (or honey), applesauce, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Add the chia seeds or flaxseeds if using. Mix well until everything is fully combined.
Pour the mixture into the prepared baking dish and smooth the top with a spatula.
Bake for 30-35 minutes, or until the top is golden and the center is set.
Remove from the oven and let the oatmeal cool for a few minutes before slicing it.
Serve warm, topped with your choice of optional toppings.
