Power Packed Baked Sweet Potatoes

is a super healthy and nutritionally dense baked sweet potato with some divine
recipes to put on top provided by professional chef Luke Baker. This
meal can be enjoyed by the whole family and it's great for those watching their
figures and trying to kick start their fitness regime.
INGREDIENTS
- One
Sweet Potato
- One Beetroot
- Handful of spicy black beans
- Coconut
sour cream - Amount depends to your preference
- Spouts
- Dash of cumin relish
DIRECTIONS
- Bake sweet potato - Heat oven to 220C/200C
fan/gas 7, oil the sweet potatoes (optional), then put them straight on the
oven shelf and roast for 45 mins or until tender all the way through when
pierced with a knife.
- Meanwhile prepare the remaining ingredients by adding to the plate (apart from
the condiments)
- Once potatoes are ready add the ingredients on top and finish off with the
flavourings.
