If you’re trying to build lean muscle and are tired of the usual options then try this great meatball recipe. It uses ground lean beef and is packed full of flavour and protein. It’s quick and easy and can be eaten as lunch or as a heavier dish served with some fresh quinoa or roasted vegetables.
Ingredients
500g extra lean, minced beef
2 red onion
1 tsp cumin
1 tsp ground coriander
1 tsp paprika
1 inch piece ginger
Small bunch fresh coriander chopped
Sea salt and black pepper
A few cherry tomatoes
1 cucumber
1 lemon
Mixed salad leaves
Handful mixed olives
1 tablespoon low fat yogurt
1 tablespoon harissa paste
Salt and pepper
Directions
Mix together the minced beef, onion, cumin, coriander, paprika and ginger.
Add a decent pinch of salt and pepper to taste
Mould the mixture into meatball shapes and fry in a medium-heat pan until golden brown on all sides
In a bowl mixed together the low fat yogurt, juice of half a lemon,salt and pepper and harissa paste
Mix together the salad leaves, lemon juice, red onion, cucumber, mixed olives and cherry tomatoes
Serve the meatballs on a bed of salad with a generous dollop of the yogurt and harissa dip.
