High-Protein Beef Stir-Fry with Low Carbs

Ingredients:
Beef Marinade:
- 1 lb (450g) lean beef (sirloin, flank, or tenderloin), thinly sliced
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 teaspoon black pepper
Stir-Fry:
- 2 tablespoons olive oil
- 1 medium bell pepper, thinly sliced
- 1 medium zucchini, thinly sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (low sodium)
- 1 teaspoon sesame oil (optional)
- 1 teaspoon red pepper flakes (optional)
- Fresh cilantro for garnish
Instructions:
Marinate the Beef:
- In a large bowl, combine the soy sauce, olive oil, apple cider vinegar, garlic powder, ground ginger, and black pepper.
- Add the sliced beef to the marinade and mix well. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Vegetables:
- While the beef is marinating, wash and slice the bell pepper, zucchini, and snap peas. Cut the broccoli into small florets.
- Mince the garlic.
Cook the Beef:
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the marinated beef to the skillet in a single layer, cooking in batches if necessary to avoid overcrowding.
- Stir-fry the beef for about 2-3 minutes per side until browned and cooked through. Remove the beef from the skillet and set aside.
Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the bell pepper, zucchini, broccoli, and snap peas. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
- Add the cooked beef back to the skillet with the vegetables.
- Stir in 1 tablespoon of soy sauce and 1 teaspoon of sesame oil (if using).
- Add red pepper flakes for a bit of heat (optional).
- Stir everything together until well combined and heated through.
Serve:
- Garnish with fresh cilantro.
