***LA Muscle Recipe of the Day*** Chicken and mango kofte recipe
A beautiful and authentic recipe which is full of protein and flavour. This mouth watering dish will sure come as a welcome treat for the whole family.
Ingredients
A chicken breast
An egg white
Garlic and ginger, 1tsp each
Cumin, pinch
Honey, drop
A mango, diced
Mint leaves, handful, chopped
Extra virgin oil, glug
Method
1. You're going to blend your kebab meat, not shave it. Give the chicken and egg white a rough blitz. Marinate the mixture in the ginger, garlic, cumin and honey for 2hr.
2. Form kebabs on skewers: wrap hunks of meat with bacon. Grill on each side until golden.
3. Heart-saving sauce? For the chutney, dice half the mango into cubes. Blend the rest with the oil, add the mint and cubes. Pour over the meat and devour.
