This is a delicious meal that is super quick to make. Literally 10 mins or less so those pushed for time will appreciate it the most! It's high in protein and health fats and tastes amazing. Either for breakfast or a light lunch it will fill you up and be ready in no time. You can always half the ingredients if you prefer smaller portions. Give it a try!
INGREDIENTS
2-3 small/medium eggs
½ medium avocado or 1 whole small avocado
2 -3 slices wholegrain bread
Handful fresh spinach leaves (optional)
1-2 tsp balsamic vinegar
DIRECTIONS
In a bowl mash avocado and season to taste. Great healthy seasoning options include black pepper, Himalayan salt, smoked paprika and 1 tsp olive oil.
In a saucepan, poach the eggs for 3-5 minutes based on how runny/firm you want them.
Toast the slices of wholegrain bread based on your preferences. It can also be left un-toasted if you don't feel like toast!
Spread the mashed avocado onto the slices of toast and place the poached eggs on top of them.
Optional, added seasoning with a sprinkle of smoked paprika, mixed herbs and a drizzle of balsamic vinegar and olive oil.
Enjoy with a cup of tea or coffee!
