1. Spray pan with non-stick spray, add cubed chicken and cook through. Set aside.
2. In a small saucepan, combine chicken stock, honey, soya sauce and then whisk in peanut butter and cornstarch.
3. Cook until thickened. Add 1 chopped green onion, red pepper and chicken and heat.
