500g boneless, skinless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon dried oregano
Salt and pepper to taste
Metal or wooden skewers (if using wooden skewers, soak them in water for at least 30 minutes before using)
Instructions:
In a small bowl, mix together olive oil, minced garlic, paprika, cumin, coriander, dried oregano, salt, and pepper to create a marinade.
Place the chicken cubes in a large bowl and pour the marinade over them. Toss the chicken until it is evenly coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Preheat your grill to medium-high heat.
While the grill is heating up, prepare your skewers by threading the marinated chicken cubes, alternating with chunks of red bell pepper, green bell pepper, and red onion.
Once the grill is hot, place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
Remove the skewers from the grill and let them rest for a few minutes before serving.
Serve the chicken kebabs with your favorite sides or sauces, such as tzatziki or hummus.
