Healthy Key Lime Pie
A Refreshing, Light Dessert

This dessert option is
delicious, light and refreshing. It's very easy to make and will
satisfy your cravings. Don't be fooled, this key lime pie might look
like a regular one but it's much lower in calories so you can enjoy
an extra slice or two!
INGREDIENTS
- 200g (7 oz) light
digestive biscuits
- 1 tsp ground ginger
- 75g (2 3/4oz) low fat
polyunsaturated margarine, melted
- 1 x 405g can light
condensed milk
- 4 limes, zest and
juice
- 125ml (4 fl oz) double
cream (less than 33% fat)
- 1 x 125g pot low fat
greek style lemon yogurt
Yields 12 servings
DIRECTIONS
- Put the digestive
biscuits and ground ginger in a food processor and blend until they
are fine crumbs. Add the melted margarine and blend again until
combined. Press into a base of a 20 cm (8 inch) loose bottomed,
fluted tart tin, using your fingers to create a shell up the sides.
Put it in the fridge to chill while you do the next step.
- In a large bowl, whisk
the condensed milk, lime zest and juice until thick. Add the cream
and yogurt and continue to whisk for 5 minutes until extra thick.
Spoon the filling on to the base and create swirls with the back of
the spoon.
- Chill in the fridge
for 2 hours until set. To serve, remove from the tin, place on a
serving plate and cut into 12 wedges.
