Banana, Quinoa & Choc Chip Breakfast Bake
A Tasty Nutritious Meal To Start Your Day

Breakfast with a difference. Try this delicious banana, quinoa
and chocolate chip breakfast bake with enough servings left over to share, or
last you a week’s worth of breakfasts!
INGREDIENTS
- 240g quinoa, rinsed and drained well
- 200ml water
- dash of salt
- 6 eggs
- 70ml almond milk
- 1 tsp vanilla extract
- ½ tsp cinnamon
- 50g maple syrup
- 3 bananas, mashed
- 35g dairy-free chocolate chips
Yields 6 servings
DIRECTIONS
- Preheat oven to 190c/170c fan.
- Bring water to boil; add quinoa and salt.
- Bring to a boil, then reduce heat to low and simmer, covered,
for 20 minutes until water is absorbed and quinoa is cooked.
- Remove lid and spoon quinoa into a large mixing bowl. Let
cool.
- In a medium bowl, whisk together eggs, almond milk, vanilla,
cinnamon and maple syrup.
- Add to quinoa and mix well.
- Gently stir in mashed bananas and chocolate chips.
- Spoon into individual baking dishes or one large baking dish.
- Bake for 20-25 minutes until breakfast bake is set.
- Let cool for 5-10 minutes before serving
