Method:
1. Preheat an iron griddle pan over a medium-high heat. Brush each breast with oil or butter, and season well.2. Place the chicken on the hot pan and cook for 3-4 minutes until golden, then change the position and cook for a further 3-4 minutes, so you get criss-cross markings. Repeat on the other side - the chicken should take 15-20 minutes in total to cook. If the breasts are large, you can transfer the pan to a preheated oven (180°C/gas 4) for 8-15 minutes to finish cooking.
